About Us
Welcome to The Palate, one of Fredericton's best places for casual fine dining. The Palate is owned and operated by Ken Roberts and Boris Müller. The restaurant opened on June 1st, 2001.
The Palate came about after Ken took a trip to Vancouver to visit a friend and experiencing west coast hospitality. Ken then decided Fredericton could use a restaurant with creative food in a quaint and casual setting.
Taking this concept, Ken modified the theme to fit in with the east coast culture and locale. After the restaurant opened Ken met Boris, a chef from Switzerland. Boris brought to the restaurant a European flare and amazing flavors to tempt the palate. A partnership was born.
"The Palate" name comes from the artistry in the food and for the artistry on the walls from local artists.
